Smoked Pork Loin with Apple Honey, Raisin & Walnut Stuffing
Ingredients:
Whole pork loin roast (split or hollowed) 1 cup raisins 1/2 cup chopped walnuts 12 oz. Log Chain Apple Honey Creme 1 teaspoon salt 1 teaspoon pepper
Mix together raisins, walnuts, and 8oz. apple honey(will work better if honey is slightly warmed) in a saucepan. Stuff roast with mixture, tie-up with string. Rub outside of roast with salt and pepper.
Cook in smoker until meat temperature reaches 170 degrees.
Brush remaining apple honey on roast and wrap in foil. Place back on smoker for 1 hour. Slice and serve. |
