Best is a lower temp with alot of smoke...in the water bath which is between the smoke box and the meat use a bottle of coke* instead of water...let it smoke 4-6 hours depending on the size of the pork butt. Should have 1/4 to 1/2-inch pink ring on the outside of the roast and be very tender. I prefer a boneless loin when its around 1.99 lb ..great taste

*2 liter bottle should last if temp is correct if it dries up use water to complete the time.
