I have used this recipe in my "Sunset Grilling Book" for 10 years. It is the night before Thanksgiving and someone has borrowed my book. I promised to lug my Weber Kettle down to my sister-in-law's house tomorrow at 6 am to set up. I was lost, and now I'm found! (Or at least the recipe is.)

I use mesquite charcoal. I've done it with 30-pound turkeys; 12 minutes per pound is about right. I add 6 briquettes per hour, sitting at the side of the BBQ with a good book, sampling the dinner wines just in case of emergency. (Or in case of another political tirade inside from brother #2.)

The Internet is WONDERFUL!!!!!
