TWICED BAKED SMASHED POTATOS (like Darryl's Restaurant)
6 large potatos, baked
Cut baked potatoes in half lengthwise. Scoop out center, leaving the potato peeling. (They used the peeling for their potato skins, or use to before they were bought out).
Mix in: 1 cup sour cream 1/2 to 1 cup margarine
Then mix in: 1 jar or bacon bits 1 cup shredded chedder cheese
Put in pan and add more cheese on top.
Bake again in 350 degree F oven or microwave. When heated add green onions on top.
FOR POTATO SKINS: Take the skins cut in half then deep fry till crisp. Put cheese in them and bacon, put under broil and melt cheese. When done add green onion on top. When served add sour cream. |
