Peaches---Lucky you!! I haven't had any this year. Most of the peaches in Alabama were killed this year. Anyway, this peach glaze is a wonderful topping for a cheesecake. Enjoy!


Peach Glaze



5 peaches
1 cup sugar
2 heaping tablespoons cornstarch
1/2 cup cold water



1. Peel peaches over blender so you catch juice in blender and blend well.
2. Add sugar.
3. Cook on medium heat until sugar is melted.
4. Dissolve cornstarch in 1/2 cup cold water. Gradually add to peaches. Stir constantly until mixed well.
5. Increase heat and boil for about one minute. It will become shiny and almost clear.
6. Cool thoroughly.
