I haven't tried this one either Juanita, but looks awfully good!! These are out of Land of Lakes Cookie Collection. And the ones that I've made from this book have turned out great!! Going to post them also :)
This cookie posting is making me hungry tho, probably post 1 more then have to get something to eat..LOL I'm for sure going to try this one this weekend. Let me know when you make any of these and how they turned out,, k :)


~~~Banana Cream Sandwich Cookies~~~

Cookies:
2 1/2 cups all-purpose flour
1 cup sugar
1 cup butter, softened
1/2 cup banana cut into 1/4" slices (about 1 medium)
1/4 t. salt
1 t.vanilla
1/2 cup chopped pecans

Frosting:
3 cups powdered sugar
1/3 cup butter, softened
3-4 Tbls. milk
1 t. vanilla
Food Coloring (optional)

Heat oven to 350°. For cookies, in large mixer bowl, combine flour, sugar, butter, banana, salt and vanilla. Beat at low speed, scraping bowl often, until well mixed, 2-3 min. Stir in nuts. Shape rounded teaspoonfuls of dough into 1-inch balls. Place 2 inches apart on greased cookie sheets. Flatten cookie to 1/4-inch thickness with bottom of glass dipped in flour. Bake for 12 to 15 min., or until edges are lightly browned. Remove immediately; cool completely.
For frosting, in small mixer bowl, combine all frosting ingredients. Beat at medium, scraping bowl often, until light and fluffy, 1-2 min. If desired, tint with food coloring. Spread 1 tablespoon of frosting over bottoms of 1/2 of the cookies. Top with remaining cookies.
Makes about 2 dozen sandwich cookies.
