I tried adding pecans to my recipe. It is a great oatmeal cookie, but as it bakes, it flattens out. My recipe calls for 3 Cups of oatmeal and 1 cup of flour. I thought about adding more flour, to thicken the dough so it would not spread out so much. I did not know what adding more flour would do to the taste of the cookie. His mom made the best oatmeal cookies and is deceased. I cannot seem to repeat the recipe so it is more like a mound or a nugget rather than a flatter cookie.
