HOMEMADE HOT ROLLS
From Sue's Kitchen (restaurant)
2 sticks (1 cup) margarine (I use I Can't Believe It's Not Butter)
1 cup water
3/4 cup sugar
2 tsp salt
2 pkg yeast
1 cup lukewarm water
2 eggs
6 cups of unsifted flour
Combine butter, 1 cup water, sugar and salt in saucepan over low heat to melt margarine. Cool to lukewarm.
Dissolve yeast in 1 cup lukewarm water. Add to first mixture. (Make sure margarine mixture and yeast/water are lukewarm - not too hot or cool)
Beat eggs and add to above. Stir in flour. Cover with waxed paper and refrigerate several hours or overnight. (Dough will keep several days in the refrigerator.)
TO BAKE:
Roll out on lightly floured board. Cut and place about 1-inch apart on greased cookie sheets. Let rise about 2 hours in a warm place.
Bake at 375 degrees F for until light golden brown, about 15 min.
TO FREEZE AHEAD:
I undercook some of these and freeze them, then pop them into the oven for a few minutes to finish and I've got homemade rolls any time.
