Well I do do a lot of substituting but do not know any basic laws. Peggy is a welath of info. here! Thanks Peggy! As far as adding tings like nuts and seeds and what not. I just do it. i think of what I want in tasta and add to make it happen. I don't do a lot with liquid adds, with those I try more substituions. With spices I just think through what ones go together and put them in. Now a lot of my spices are old so I add alot to get the flavor. I listed some of my favorite adds with my recipe whit bread plus below. One gal suggested that i use baby food in my pasta and I was wondering about using that in bread?? I'm gonna pick some up this week and try, with that I will be adjusting the liquids to suit. If you make additions it is reccomendied that you look at the dough during the 2 knead, is it the right consistansy? I don't really do this with dry adds but have been strongly caustioned to do so. I'm lazy and jaut figure if it is not right I have notlost much - - hey it is fun. instidently with all the changeing I do to my bread I have not made but one funny loaf (tasted okay)since i got this machine in Nov.! It happened to be the loaf I peeked at and adjusted !! HA HA You have to understand ... I love to expiriemnt, even do it with guest comming, some reminants of my mom I guess. I love texture and color and taste! I'd listen so tomeone like Peggy for real measure & inf. and me for the bravado to TRY!
