Classic White Cake
2 1/4 cups flour 1 2/3 cups sugar 2/3 cup shortening 1 1/4 cups milk 3 1/2 teaspoons baking powder 1 teaspoon salt 1 teaspoon vanilla 5 egg whites
Heat oven to 350 degrees. Grease and flour 2 round pans, 8 or 9 inches in diameter. Beat flour, sugar, shortening, milk, baking powder, salt and vanilla in large bowl on medium speed, scraping bowl constantly, until blended, about 30 seconds. Beat on high speed, scraping bowl occasionally, 2 minutes. Beat in egg whites on high speed, scraping bowl occasionally, 2 minutes. Pour into pans. Bake 30-35 minutes. Cool 10 minutes; remove from pans. Cool completely.
