Butterscotch Krimpets
cake: 4 egg whites one 16 oz box pound cake mix 2/3 c water frosting: 1/8 c butterscotch chips 1/2 c butter, softened 1 1/2 c powdered sugar
Preheat oven to 325 degrees. Beat the egg whites until thick. Blend the egg whites with the cake mix and water. Pour the batter into a greased 9x12 baking pan. Bake for 30 min. or until the top is golden brown and a toothpick inserted in the center comes out clean. Cool.
For the frosting, melt the butterscotch chips, either in the microwave or in a double boiler over hot, not boiling water. Mix the butter with the melted butterscotch. Add the powdered sugar. Blend until the frosting has a smooth consistency. Spread the frosting on top of the cooled pound cake. Makes 27 cakes.
Peanut Butter Kandy Kakes
4 egg whites 1 c peanut butter one 16oz box pound cake mix 1/2 c powdered sugar 2/3 c water 1 pkg milk chocolate chips, 11 1/2 oz
Preheat over to 325 degrees. Beat the egg whites until fluffy. Blend the egg whites with the cake mix and water. Pour tablespoon size dollops of batter into each cup of a well-greased muffin tin. You will need several muffin tins. Bake for 10 min, or until toothpick inserted in center of cake comes out clean. Clean muffintin for later use. Do not grease.
Combine the peanut butter and sugar. While the pound cakes cool, heat the chocolate chips in the microwave or double boiler, stirring often. When the chocolate is soft, line the bottom half of each muffin tin cup with shortening; then use a spoon to spread a thin layer of chocolate in each cup. With your fingers, spread a thin layer of peanut butter over the chocolate. Place a cake round on the peanut butter layer. Spread a layer of chocolate over the top of each cake, spreading to the sides to cover the entire surface. Cool in the refigerator for 10 min and then turn out of the tin. Makes 30 cakes.
I have made the Krimpets but have never made the Kandy Kakes (I've never even tasted a "real" one) so I don't know how close this recipe is or how difficult it is to make. Hope this is what you wanted. Enjoy!
