Hi Shawn;
These are a "most requested" recipe at my house, been making them since the kids were little. I always make these when I have house guests who will be having breakfast with us, and they always rave about them. Hope you like them too.
BRAN MUFFINS

1 1/4 C. Sugar
2 1/2 C. Flour
2 1/2 tsp. Baking Soda
1 tsp. salt
3 1/2 C. Raisin Bran Cereal (1/2 15 oz. box)
2 C. Buttermilk
1/2 C. Vegetable Oil
2 Eggs beaten

Mix all dry ingredients. Add buttermilk, oil, and eggs. Mix well. Refrigerate in a covered plastic container for at least 6 hours. (Batter may be kept in the refrigerator up to 6 weeks)

Fill paper lined muffin tins 2/3 full. (an ice cream scoop works great) Bake at 375 degrees for 20 minutes. (check for doneness after 15 minutes)

Makes 3 dozen
