3/4 (1) cup chopped rhubarb 2/3 (1) cup water 1/4 (1/2) teaspoon finely shredded orange peel 1 (2) tablespoons margarine or butter 1 1/3 (2) cups whole wheat flour 2/3 (1) cup bread flour 2 (3) tablespoons brown sugar 1/2 (3/4)teaspoon salt 1/4 (1/2) teaspoons cinnamon 1 (for both) teaspoon active dry yeast or bread machine yeast
In a medium saucepan combine rhubarb and water. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes or till rhubarb is tender. measure rhubarb water mixture and add water if necessary to equal 1 (1 1/3) cups. Cool slightly. Add ingredients to machine according to manufacture's directions. Samll loaf serves 16. Per serving:69 caloreis, 2 g protein, 13 g carbohydrate, 1 g fat (0 saturated), 0 mg cholesterol, 77mg sodium, 73 mg potassium.
