Hi Kelly,

I have been working at a restaurant for a few months and the boss and I are wanting to serve fresh cinnamon buns in the a.m. for our coffee drinkers. The problem is I do the baking and work only evenings. We've been experimenting with dough that can be made up in the evenings and baked in the morning. We've had some success with the recipe that follows.

3 cups warm water
2 eggs, beaten
3/4 cup sugar
4 Tbsp melted butter
8 cups flour (approx.)
1 Tbsp Fermipan yeast
1 1/2 tsp salt

Mix ingredients at 5:00 p.m. Punch down every hour till 10:00 p.m. Make cinnamon roll, slice about 1 1/2" thick and put on pans. Put into cool oven and let rise till 7:00 a.m. Preheat oven to 350* (reminder: take rolls out of oven to preheat). Bake 20-25 mins.

If you like gooey rolls, pour this sauce into the pan before adding your shaped rolls.

1 cup corn syrup
1 cup cream
1 cup brown sugar
1/4 cup margarine
Bring to boil and pour into pan.
