I just made a batch of choc chip cookies using the classic Toll House Cookie recipe. I'd like to alter this recipe so that the cookies are harder, crunchier (more crumbs) and darker (should I subsitute the white sugar for the brown sugar to make it darker and will this alter the taste ?) In addition, will using castor sugar(fine granulated sugar) instead of granulated sugar make a difference ?
