Peggy, I got this recipe out of the coupon section of the paper. The cookies are very soft, but are coated with an orange glaze. I don't know if this helps or if you could vary it to your needs.
2 1/2 c flour
1/2 teaspoon bakin soda
1/2 teaspoon salt
1 cup butter
1 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 3/4 c (15oz can) Libby's pumpkin
2 Tbsp orange juice
1 tsp grated orange peel
1/2c chopped nuts (optional)

Combine flour, baking soda and salt-set aside

Combine butter, sugar and brown sugar. beat until creamy. Add egg, pumpkin, orange juice and orange peel beat until combined. Gradually add flour mixture, beat until combined. Stir in nuts.

Drop by rounded tablespoon onto ungreased baking sheets. Bake at 375 for 12-14 minutes.

Top with orange glaze (1 1/2c powdered sugar, 2-3 tablespoons OJ and 1/2 tsp grated orange peel)

I also added cinnamon, nutmeg and cloves to my second batch because I thought the first seemed a little bland. Hope this helps.
