mashed my bananas and added to the egg, rather than do a chopped bananna and add it like a fruit to the flour. The kids here think chopped banana bakes too.... "yucky", is the word what they just told me . But chopped or mashed, I'm just dying to try them because I have never had banana and coconut together in a muffin before....sounds great!
