I mash my bananas for banana bread, I don't like pieces of it either and I like the way it bakes better when it's more evenly distributed. Let me know how it turns out.

I can't believe you've made all these recipes this week! I'm a bit jealous that it's so cool up where you are - my mom made me an afghan and sent it to me this week but I was only able to use it long enough for a nap on the couch this afternoon! Fall is my favorite time of the year and I love to bake but it's hard to get in the mood when it's almost 90* in October!!

Again, let me know how the muffins turn out, at the rate we're going we are going to have to start meeting over at the diet support board and start posting diet tips instead! LOL
