My luck, wasn't great here tonight!!! Don't think these muffins wil be devowered by the muffin monster!! I gave the rest of the one I bit into to our dog, coco, and even she turned her nose up at it....ha....see I guess sometimes it's a bit of a dog's world we live in after all..ha..ha..

Here's the results:

I followed everything on the recipe, the exact ingredients, amounts, cooking time, etc. There was several problems. I just bit into one and they're wet and a little soggy too. Except for the blueberry flavour there wasn't any real flavor to the actual muffin. I thought when I was preparing them that 1 1/4 cups of buttermilk, plus 1/2 cup honey plus 1/4 cup olive oil and an egg was a good bit of liquid to use in muffins. The batter was just as thin as a cake batter. I had about 1 cup of the cream cheese filling left over as well, after the 12 muffin wells were filled. Also they were really....really.....really sweet....there's 1 cup of sugar plus 1/2 cup of honey....that's why I guess. I had also cut it back to 3/4 cup of sugar plus the honey......

But the good news is that the cream cheese mixture is pretty tasty. I'm going to add this to the centre of the "carrot orange pineapple muffins I'm about to post. There's enough left over to fill another 12 muffin wells!!

Anyway maybe we'll delete this one recipe!! Look at the next posting for the recipes I promised....these are my tried and true favourites..been making them for at least 10 or 12 years..
