These are another moist, nutritious muffin....They're delicious!
Apple Wheat Muffins:
1 cup whole wheat flour 3 tsp. baking powder 1/2 tsp. salt 1/4 cup wheat germ (there's a nice toasted type of wheat germ available) 1 egg 3/4 cup french vanilla yoghurt 1/4 tsp. vanilla extract 1/2 cup brown sugar, lightly packed 1/4 cup oil 1 cup grated apple, with peel still on.
Directions:
Combine dry ingredients Combine and mix wet ingredients until smooth Grate apple.....lay the grated apple in paper towels and press excess liquid out of apple. Change paper towels and repeat process. I've found the excess juice makes the muffins a little too moist for my liking! Bake at 375 for 18-20 min.
