Hi Colette - here is a recipe for bagels that I have used a couple of times. They turned out just fine, but are a lot of work.

BAGELS

2 pkgs. of yeast
4 1/2 cups flour
1 1/2 cups warm water
3 tbsps. sugar
1 tbsp. salt

In lg. bowl, combine yeast and 1 3/4 cups flour. Combine water, sugar, and salt and add to yeast mixture. Beat at low speed of mixer 1/2 minute, scraping sides of bowl constantly. Beat 3 min. at high speed.

By hand, stir in enough flour to make moderately stiff dough. Turn out on floured surface and knead til smooth, 5-8 min. Cover and let rest 15 miniutes.

Cut into 12 portions and shape into smooth balls. Punch hole in center with floured finger and pull gently to enlarge hole, working each bagel to uniform shape. Cover and let rise 20 min.

In large kettle, combine 1 gallon water, and 1 tbsp. sugar; bring to boil. Reduce to simmer, and cook bagels 4 or 5 at a time, for 7 minutes, turning once. Drain.

Place on ungreased baking sheet and bake at 375* 30-35 minutes. Makes 12 bagels. This recipe may be cut in half.
