Helen:

I would put a very light coat of olive oil at the 15 minute time you indicated your machine allows but very light to the touch, to not disturb the rising cycle, then lightly sprinkle your choice of seeds.

In answer to your question of the book, yes, you should be able to pick this book up at any book store, or they surely can order you one!.

If your bread finishes with not enough seeds sticking to the top just coat the bread top with a little more olive oil, then sprinkle seeds again. I sometimes add a tiny bit of Cardamon Spice to the top, this gives the bread a wonderful smell and flavour, especially if you are going to serve to company, they compliment you but can't figure out what gives the bread this flavour.

Cardamon can be found in any of the food markets. I use it on all my cakes, cookies and danish pastries, Try it.

I hope this helps you, We'll get a prize loaf yet!!!

Fran.
