Nancy, you have received some excellent advice already. I don't make
cheesecake often enough (too many calories and temptation, sigh) to offer any
suggestions. However the food editor of my local newspaper covered this
subject just two weeks ago. I found the column very informative. She highly
recommends a cookbook, "What's elcome to Junior's! Remembering Brooklyn With
Recipes and Memoris From its Favorite Restaurant" I have already checked and
it is available from Amazon.com. She also offers several cheesecake recipes in
this article. Here is the link to it.
