WHITE CHOCOLATE BANANA COFFEE CAKE
2/3 cup butter, softened 1 1/2 cups sugar 2 eggs 3/4 tsp. almond extract 2 cups mashed ripe bananas (5 medium) 3 cups all purpose flour 1 cup white chocolate chips 2 tsp. baking powder 2 tsp. baking soda 1 cup sour cream
TOPPING: 2/3 cup chopped almonds' 1/4 cup packed brown sugar
Grease 13x9 inch cake pan; set aside.
Topping: In small bowl, mix almonds with brown sugar; set aside.
In large bowl, beat butter with sugar until fluffy. Beat in eggs 1 at a time; beat in almond extract. Stir in mashed bananas.
Stir together flour, white chocolate chips, baking powder and baking soda; add to butter mixture alternatively with sour cream, making 3 additions of dry ingredients and 2 of sour cream. Spread in prepared pan. Sprinkle with topping.
Bake in 350 F. oven for 50-55 min. or until cake springs back when lightly touched. Let cool in pan on rack.
