Hi Colette, Here is one of our family favorites. There are so many similiar,
but different versions of this Italian Cookie!

AUNT ROSE'S BISCOTTI

3/4 LB. Butter (3 sticks)
1 3/4 cups Sugar
6 Eggs
1 tsp. Anise extract
1/2 tsp. Anise Oil
6 cups Flour
1/2 tsp. Salt
2 tsp. Baking Powder
2 tsp. Vanilla extract
1/2 cups chopped Almonds

Cream butter and sugar. Add eggs and beat well. Add the remaining
ingredients. Knead like bread until dough is smooth. Divide dough in fourths
and shape into loaves about 3 inches wide by 17 inches long. Place two loaves
on each cookie cookie sheet. Bake 35 to 40 minutes at 350 degrees. When cooled,
cut diagonal slices about 1/2 inch wide. Place on cookie sheet and brown like
toast, turning to brown on both sides. Great with Cappuccino or a liquor.
