COCONUT MUFFINS
1 cup rolled oats, regular or quick 1 cup buttermilk 1 cup flour 1/4 teaspoon salt 1/2 teaspoon baking soda 1 1/2 teaspoons baking powder 1/2 cup melted butter 1/2 cup brown sugar, not packed 1 egg 3/4 cup shredded coconut 1/4 cup crushed pineapple, drained 1/3 cup chopped macadamia nuts, or slivered or sliced almonds Combine the rolled oats and buttermilk. Set aside. Combine the flour, salt, baking soda and baking powder. Stir together the melted butter, brown sugar, egg, coconut, pineapple and nuts. Stir into the oat mixture. Add the dry ingredients. Stir only until moistened. Spoon into greased muffin cups. Bake at 400 degrees F. for 20 minutes. Let sit for a few minutes. Remove to a rack. Serve while still warm. YIELD: 12 muffins
Variation - Brown Sugar Topping: 1/4 cup flour 2 tablespoons rolled oats 1/4 cup brown sugar 3 tablespoons butter 1/4 teaspoon cinnamon, optional
Combine ingredients and mix until crumbly. Sprinkle over muffins before baking. |
