This recipe is similar to Cheri's but may be a little richer.
I don't know, you can be the judge. It never hurts to have a
couple of variations on a theme.

Carrot Bars

2 tsp baking soda
1 tsp salt
2 1/2 C flour
2 tsp cinnamon
4 eggs
2 C sugar
1 1/2 C margarine or vegetable oil (I use the oil)
3 small jars carrot baby food (the really pureed type for very
little ones, just on their first solid food.)
1/2 C chopped nuts (optional-I never have used)

Sift together dry ingredients-set aside. Beat together, eggs,
sugar, oil & carrots. Add flour mixture & nuts. Bake in a greased
jelly roll pan @ 350 deg. for 20 to 25 minutes.

Frosting

3 1/2 C confectioners sugar
1 8 oz pkg cream cheese, softened
1/2 C. margarine (I have always used butter)

Combine all ingredients. Mix thoroughly. Frost cooled bars.

These can be frozen. I have never frozen them w/frosting on,
just the bars.
