A friend just discovered red velvet cake at a local restaurant. She had asked how they make it red and I was surprised to learn they use beet juice. I've been dumping bottles of red food coloring in my cake batter, as my mom did, and as all the recipes I've seen do. Wondering if anyone has a recipe for that, or if it would be exactly the same -- just use the same amount of beet juice as food coloring. Must be a little healthier than dye. Anybody else do it "the beet way?"
