Thanks Sarah & Joan,
I am really happy to inforom you that my muffins are really mosit, soft (throughtout) and yummy!!! We had it this morning and they were JUST GOOD!!! This was what I did to my apple muffin recipe. Thanks a lot guys!

Apple Muffins (approx 9 muffins), standard size

Dry mix:
1/2 cup Nestle Sunshine full cream milk powder
1 1/2 cup self-rising flour

Wet mix:
1 egg
2/3 cup caster sugar
1/2 t each: cinnamon powder and vanilla essnce
1 skined, cored, chopped Granny Smith Apple
1/2 cup buttermilk (I just love buttermilk!)

Preheat oven to 350F/180C (Like Sarah told me...)
Use food processer to finely mix the wet mix.
In a bowl, sift dry mix and make a well in the center.
Pour the wet mix into the well. Mix well, but not over mixed. (It was a bit lumpy.) Divide the batter into 9 muffin cups (and fill the rest holes with hot water.)

I placed a tray of hot water at the bottom of the oven and baked the muffins for 25 minutes.
