Pineapple Bread

Sweet Bread

Small Loaf
1 1/2 tsp. active dry yeast
2 cups bread flour
1/4 cup sugar
1 tsp. salt
2 tsp. grated orange zest
4 Tbsp unsalted butter
1 egg
1/2 cup unsweetened coconut milk
1/4 cup pineapple chunks, drained
2 Tbsp water
1/4 cup raisins

Large Loaf
2 1/4 tsp.. active dry yeast
3 cups bread flour
1/3 cup sugar
1 1/2 tsp. salt
1 Tbsp grated orange zest
6 Tbsp unsalted butter
1 egg
1 egg whites
3/4 cup unsweetened coconut milk
1/3 cup pineapple chunks, drained
3 Tbsp water
1/3 cup raisins

Add all ingredients except the raisins in order suggested by your bread machine
manual and process on the bread cycle according to manufactures directions. At
the beeper add the raisins.

Pineapple Bread

2 tsp. yeast
2 cups bread flour
3 Tbsp sugar
1/2 tsp. salt
1/4-1/2 cup grated coconut (to taste)
3 Tbsp butter unsalted
2 tsp. pineapple extract
1 (8 oz.) can crushed pineapple, drained
2/3 cup cream cheese
1/2 cup coconut milk

Add all the ingredients to the machine in the order listed. Choose either
regular or light crust and push start.
