Here is a great cookie recipe for this time of year.It's very light and tasty!! Lemon-Lime Cookies 1 cup sugar 2/3 cup shortening (crisco) 1 TBSP. grated lemon peel 2 TBSP. lemon juice(fresh) 2 tsp. grated lime peel 1 TBSP. lime juice (fresh) 1 egg 1 3/4 cup all-purpose flour 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt Lemon-Lime frosting ( recipe follows) Preheat oven to 375 F.Beat sugar,shortening,lemon peel,lemon juice,lime peel, lime juice and egg in mixer bowl on medium speed until thoroughly combined. Combine the flour, baking powder,baking soda and salt ; add to the egg mixture. Beat well. Drop dough by rounded TBSP. onto ungreased cookie sheets 2" apart(cookies will spread a little).Bake cookies at 375 F. for 11-13 minutes , or until edges are lightly browned. Cool completely.
Lemon-Lime frosting 2 cups powdered sugar 2 TBSP. butter or margarine, softened 1 tsp. grated lime peel 1 TBSP. lemon juice 2-3 tsp. water Combine all frosting ingredients, mix well until icing is of spreading consistancy, adding more water if needed. Ice cooled cookies......enjoy!!!
