I usually disdain canned foods, but for making pumpkin quick bread I do used canned. Lately all they've been selling in Jakarta is pumpkin pie mix in a can, which already contains molasses and spices and who knows what else. So I'll have to upgrade to fresh ingredients! Does anyone have a quick bread recipe that starts with FRESH winter squash? Although I haven't seen pumpkins around, I can get butternut, acorn squash, etc., and have always heard you can substitute pumpkin and other winter squashes for each other.
This is for my kid who is not eating veggies these days except when disguised in forms such as pumpkin bread, so the less sweet the better. But I can adapt any recipe I get: for any quick bread or muffin I make for him, I usually cut back the sugar. use whole wheat, and use Cornell triple-rich formula [soy, wheat germ, and pd milk substituting for part of the flour.
