Here is some thing very yummy I baked yesterday


Granadilla squares
********************* 6 tbsp butter
1/4 cup icing sugar(confectioners)
1 cup all-purpose flour
1 tbsp ice-cold water to bind, if necessary
1 lb castor sugar
9 jumbo eggs, beaten
1/2 cup lemon juice
2/3 cup fresh granadilla(passion fruit) pulp
icing sugar for dusting
Makes 12 - 16 squares
Preheat oven to 180oC(350f). Cream butter, icing sugar and 2/3cups of the flour and water to bind, if necessary. Press into an ungreased medium square baking pan. Bake for 15 minutes, or until golden. Cool completely. Beat sugar and eggs for about 10 minutes at high speed, or until pale yellow and thickened. Beat in lemon juice and granadilla pulp, then fold or beat in remaining flour and pour over base. Bake for 45 - 50 minutes, or until just firm to the touch. Cool completely. Dust with icing sugar. Cut into squares and serve.


Notes:
. If mixing the dough by hand, you will probably need to add the ice-cold water.
. For best results, use fresh granadilla pulp; the canned pulp is too thin.
. If desired, use more granadilla and less lemon juice.
