Here is a recipe for Potato Onion Bread. It is very good, especially warm or toasted. Hope you enjoy it as well! Happy Baking!
1 1/2 c. mashed potatoes (2 medium potatoes with skins) 1/2 - 3/4 c. finely chopped onion 2 pkgs. dry yeast 2 c. warm water (105 degrees) 3 T. honey 1/3 c. dry milk powder 1 T. salt 3 T. oil 6-7 c. unbleached white flour or bread flour egg wash: 1 egg beaten with 2 T. water
Boil potatoes in water until very tender. Drain and mash (with skins) until very smooth, adding up to 3 tablespoons hot water. Let cool until lukewarm.
Dissolve yeast in the 2 c. warm water. Add honey, milk powder, salt, oil, warm potatoes, and onions, stirring well to mix. Gradually add 3 c. flour, stirring vigorously. Add remaining flour 1/2 c. at a time until dough is stiff enough to handle.
On lightly-floured surface, knead in enough flour to make a fairly stiff dough that is no longer sticky. Knead until elastic (10 minutes).
Place in greased bowl (greased side up), and let rise until doubled (about 1 hr.). Punch down and shape into 2 loaves. You may choose 2 round loaves or regular loaves. Let rise until doubled. Slit tops with a knife. Brush with egg wash mixture. Bake in preheated oven (350 degrees) for 35-45 minutes or until loaves sound hollow when tapped on the bottom. Remove from pans. Cool on racks. |
