I have an Oat-Nut bread recipe to share - it was a pleasant surprise from one of my experiments substituting ingredients in a recipe. I hope you enjoy it too.

Betsy

Bread Machine Oat-Nut Bread

This recipe makes a very high-rising loaf that has a tender crumb and crust. It's great for toasting which really brings out the nutty flavor.

Ingredients listed are for a two pound capacity machine (halve recipe for smaller machines). Follow the manufacturer's instructions for the order of placing ingredients in your machine.

1 3/4 cups milk (I warmed it a little in the microwave)
2 tablespoons oil
1 1/2 teaspoons salt
1/4 cup sugar
2/3 cups oatmeal (I used old-fashioned (not quick or instant)
2/3 cups finely chopped walnuts
4 cups flour (I used Better for Bread® flour)
2 teaspoons yeast

Bake in bread machine using Sweet or Basic/White cycle.

If you'd like to try the original recipe I started with, the substitutions are:
For the milk: 1 3/4 cups water and 2 tablespoons dry milk
For the nuts: chopped pecans
For the oil: 2 tablespoons butter or margarine, softened
For the yeast: 1 3/4 teaspoons
