Julie, Here is a recipe for Quick Raisin Bread...one I used to make BEFORE I got a good bread making machine. I have a Bosch now, and make raisin bread in bulk, 4-9"x5" loaves at a time. This recipe uses baking powder rather than yeast. It's quick to prepare. I have a diabetic friend who uses this recipe all the time.

Quick Raisin Bread:
3 c. flour
4 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. white sugar
2 eggs, slightly beaten
1 1/2 c. milk
1/4 c. melted shortening, slightly cooled

Mix flour, baking powder, salt and sugar. Combine eggs, melted shortening and milk. Add to dry ingredients all at once. Stir just until the dry ingredients are moistened. Stir in 1 c. raisins and 1/2 c. currants. Turn into 9 1/2"x5 1/2" loaf pan, lined with waxed paper. Bake at 350 degrees F. for about an hour.
