Polenta is a coarse grind of cornmeal, so try using the fine grind of polenta. I have never baked with a fine grind of polenta, but I think that the texture of your muffins may be a bit crunchy, as polenta bakes into a coarser texture than cornmeal. If you can find a regular cornmeal, that's the best !!!!

If you find corn flour, use that instead of cornmeal. It's a finer grind than polenta.

You can also substitute whole wheat flour or a multigrain flour for the cornmeal, but then you won't have a corn muffin !!
