This is a great cake, I made it for my dad last night, he loved it.
2/3 c. oil 1 c. sugar 2 eggs 1 c. flour 1 tsp. baking powder 1 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 1/4 tsp nutmeg 3 Tbl. bourbon 1 1/2 c. grated carrots 1 c. chopped pecans
Beat oil and sugar until well mixed. Beat in the eggs and stir in the dry ingredients. Add bourbon, carrots and pecans, mix well. Pour into greased and floured 9x9" cake pan. Bake 325F 40 minutes. Cool in pan.
Bourbon Glaze 1 c. powdered sugar 2 Tbl. hot water 1 Tbl. bourbon Blend together and spread over cooled cake |
