Elizabeth - I never had much luck with that recipe either. Here's one that I use that always comes out perfect:

Crust
2 cups chocolate wafer crumbs or graham cracker crumbs
1/3 cup butter, melted
3 tblsp sugar

Mix these and spread into a 9" springform pan. Refrigerate.

Filling
3 pkgs (8 oz ea) cream cheese, softened
1/2 cup sugar
2 tblsp all-purpose flour
1 tsp vanilla extract
2 egg whites
1 cup whipping cream

In a mixing bowl (I use a mixer - much easier), beat cream cheese, sugar, flour and vanilla until fluffy. Add egg whits and beat onlow until just blended. Stir in cream. Pour into crust. Bake 375 degrees for 40-45 minutes. Remove from oven andimmediately run a knife around the pan to loosen the crust. Cool on wire rack for one hour and refrigerate until you're ready to serve.
