Best Chocolate Cookies
2 c. flour 2 tsp baking powder 1/4 tsp salt 1/2 c. butter 6 squares of unsweetened chocolate 2 c. sugar 4 large eggs 2 tsp vanilla 50 Andes Candies Chocolate Mints 1/4 c. granulated sugar
Mis flour, baking powder, and salt. Melt butter and choc. in a heavy saucepan. Stir over low heat until melted and smooth. Cool to room temperature. Add 2 cups of sugar, eggs, and vanilla. Add flour mixture and mix well. Cover abd chill 2 hours or overnight. Preheat oven to 300 degrees. Roll into slightly mounded tablespoons and roll into a ball and dip into sugar. Bake 20 minutes on a greased cookie sheet until cracked on top. Place cookie sheet on wire rack and immediately place a square of candy on each cookie. When melted, spread candy over each cookie. Cool 5 minutes before removing from rack.
I only use half of the Andes Candy--your choice!!!!!! Thus is my daughters favorite cookie!
