HI all ! This a great pumpkin cookie recipe that I found last week. Pumpkin White Chocolate Drops 2 cups butter or margarine,softened 2 cups sugar 1 can ( 16 oz. ) solid pack pumpkin 2 eggs 4 cups all-purpose flour 2 tsp. pumpkin pie spice 1 tsp. baking powder 1/2 tsp. baking soda 1 bag ( 12 oz.) white chocolate pieces (chips) 1 container ( 16 oz. ) ready-to-spread cream cheese icing*** 1/4 cup light brown sugar,packed
1.) Preheat oven to 375 F. Grease cookie sheets or line with parchment. Beat butter and sugar in large bowl until light and fluffy.Add pumpkin and eggs; beat until smooth. Add flour,pumpkin pie spice,baking powder and baking soda : beat just until well blended. Stir in the white chocolate chips.
2.) Drop dough by tsp. about 2" apart onto prepared cookie sheets.Bake at 375 F. for about 13-16 minutes or until set and bottoms are lightly browned. Cool 1 minute on cookie sheets. Remove from sheets to wire rack to cool.
3.) Combine ready-to-spread icing with the brown sugar,mix well. Spread on warm cookies. Makes about 6 doz. cookies
******I made my own cream cheese icing and then added the brown sugar. 8 oz. cream cheese, softened....1/2 cup butter,softened....1 pound powdered sugar(4 cups) ....1 tsp. vanilla extract....beat well ...
