Baileys Cheesecake Makes one 9" cheesecake
1-1/2 cups coarse graham cracker crumbs 1/2 stick butter, melted 1-15 oz carton ricotta cheese 8 oz cream cheese 4 eggs, lightly beaten 1/2 cup sugar 1/3 cup Baileys 1 tsp vanilla 1/4 tsp salt
Combine crumbs and butter; press over bottom and sides of greased 9" springform pan. Chill. Preheat oven to 325 degrees. Beat together ricotta and cream cheese until smooth. Add remaining ingredients and beat until smooth. Pour mixture into pan and bake 1 hour and 15 minutes or until firm in middle. Cool 20-30 minutes in pan before removing. Cool completely before serving. |
