In Portugal, we usually use a lot of almonds and eggs to bake easter cakes.Here's an example of a delicious cake I normally bake all year through: Almond cake with egg frosting :) (Bolo de amêndoa com doce de ovos) 9 eggs 1 teaspoon salt 200 gr.almonds 250 gr. white sugar 1 full tablespoon self raising flour
Separate eggs and whisk the egg whites with the salt until really stiff. Beat sugar and egg yolks until it doubles volume. Sift flour. Process the almonds in the food processor really well and mix in the flour. Add the whites and the almonds/flour mixture to the sugar mixture folding them carefully.Bake in moderately hot oven until done.
Frosting
8 egg yolks 1 egg 2 dl water 250 gr.sugar
let sugar and water boil for 3mn.Let cool. whisk lightly yolks and egg.Stir the sugar and eggs and take to low heat. Let it cook stirring constantly until it thickens but don't let it boil. When it's cold pour over the cake and decorate with toasted slivered almonds.
The cake doesn't grow very much because it doesn't have much flour.
