BANANA OATMEAL COOKIES
3 bananas 1/3 cup salad oil 2 cups oatmeal (quick cook) 1-1/2 cups chopped dates 1/2 cup chopped walnuts or pecans 1 tsp. vanilla 3/4 tsp. salt
Mash bananas. In large bowl add all the following ingredients. Drop by rounded Tablespoons on ungreased cookie sheet. Bake 20-25 minutes. Preheat oven to 350 degrees F. Grease 11 x 7 inch pan. In large mixing bowl, combine shortening, brown sugar, vanilla, lemon juice and banana until well blended. Sift together the flour, baking powder and salt. Slowly add to the banana mixture; stir until well blended. Stir in chopped nuts. Pour into pan and bake for 30 to 35 minutes. While warm, cut into bars and remove from pan. Combine powdered sugar and cinnamon. 3 c oatmeal 1 1/2 c flour 1/2 c sugar 1 c packed brown sugar 1 c margarine, softened 1 tsp baking soda 1/2 tsp salt 1 tsp cinnamon 1 tsp powdered cloves 1 tsp vanilla extract 1 banana 1 c raisins
Preheat oven to 350F. In a large bowl, mash banana, and mix with margarine, sugars, and vanilla until creamy. in another large bowl, mix flour, baking soda, salt, cinnamon, and cloves. Add dry mixture to wet mixture and mix together completely. mix in oatmeal and raisins. Place dollops of cookie mixture onto ungreased cookie tray. You can make them any size, but if you make them too large or small, you may have to adjust the cooking time. For dollops about 2.5" in diameter, 15 minutes will suffice. Slightly undercooked cookies are chewier, overcooked are slightly brown and will become crunchier after cooling. Bake for 15 minutes, or until slightly golden-brown. Variations: Chopped walnuts and/or chocolate chip cookies are nice additions to this recipe. If you add either or both, reduce the amount of raisins. 2 bananas, mashed 1/2 cup molasses 3/4 cup sugar 2 tsp vanilla 1 cup flour 2 cups oats 2 tsp baking soda 1 tsp ginger 3 tsp cinnamon
Mix bananas, molasses, sugar, and vanilla. Add remaining ingredients and bake at 350F 10-15 minutes. (Note: can leave out sugar if you don't like such sweet cookies.)
