Hi Yong,
I tried emailing Betsy for your email address but I'm not sure whether it got thru...i'm not very smart where computers are concerned.

Ok, here's the recipe.

455g butter
17 egg yolks + 150g sugar
7 egg whites + 50g sugar
115g plain flour
1 tsp mixed spice
2 Tbsp rum/brandy

1. Cream butter until pale and set aside.
2. Whisk egg yolks with sugar and set aside.
3. Whish egg whites with sugar and set aside.
4. Then fold the egg yolk mixture with the butter, egg white mix and flour, spice, rum/brandy alternately and a little at a time.
5. Grease and line a 7 inch square tin. Heat up the oven grill and heat up the tin. Then pour about 1 teacup of mixture into the tin and spread evenly. Grill until brown, then put on next layer and repeat. When you get to the final layer, switch from grill to bake and bake for about 10 minutes or until done.

It's a lot of work but worth it. Have fun baking.
