after i made the kastera cake, i baked this banana bread (Well, i must call it a "cake" as it tastes more like a rich banana cake.) it's rather moist. though i don't have swiss-style pineapple yogurt & canned pineapple, i used the local yogurt and fresh "grated pineapple" as we are blessed with lots of them here in malaysia. Then the shredded coconut was from 1/2 a coconut coz i thought fresh one is better (well, maybe not? but cheaper anyway!)
i keep one loaf and gave one away. my friend was very happy! She called back just an hour ago said it's "finished"!!! i think i will bake 2 more loaves tomorrow. thanks Gina!
