Apple Cobbler, by Ainsley
Prepared 2/4/00

For the dough:
2 cups all-purpose flour
1/2 lb. unsalted butter
1/4 cup sugar
1-3 TBS.ice water
For the filling:
4 apples, cored and sliced
1 oz. dried cranberries
2 TBS. orange juice
3 oz. light brown sugar
1/2 tsp. cinnamon
1/4 cup fresh breadcrumbs
1 TBS. butter, chilled and diced
Cinnamon or vanilla ice cream

1) Preheat the oven to 375 degrees.
2) Make the dough. In a food processor or with beaters, combine the flour and sugar. Add the butter in bits, and process until the texture is like crumbs. With motor running, add ice water and process until dough forms a ball.
3) Roll dough into sausage shaped log, wrap in wax paper, and refrigerate for at least 1/2 hour.
4) Place the apple slices, cranberries, brown sugar, cinnamon, and orange juice in a pan. Cover and cook over a low heat for 7-8 minutes until the fruit is beginning to soften.
5) In a buttered pie dish, sprinkle breadcrumbs on the bottom. Place fruit mixture in pie dish and dot the butter over the top.
6) Slice rounds of pastry dough, and shingle around top of pie dish. Bake in the oven for 25-30 minutes until golden brown.
7) Serve with ice cream.

Makes 4 servings

TIP: Use breadcrumbs in bottom of pie to absorb excess liquid and add texture
