Butterscotch Nut Bars
1 1/2 c. flour 1 tsp. salt 1/2 c. sugar 3/4 c. butter 2T. butter 6 oz. butterscotch chips (1/2 pkg.) 1/2 c. white corn syrup 12 oz. mixed nuts or cashews
Mix flour, salt, and sugar. Cut in 3/4 c. butter until it resembles a crumb-like mixture. Press into an ungreased 9 X 13 pan well and bake at 350 degrees for 20 minutes or until golden brown. Let cool.
Spread nuts over cooled crust. In saucepan on stove, melt 2 T. butter, corn syrup and butterscotch chips. Pour evenly over nuts and cool. Cut into bars. These freeze very well; therefore, you can make them ahead of time. They thaw pretty quickly.
