Kim, here is a recipe for Applesauce Cheesecake it is not the one you are looking for from a magazine, however, thought it was close and perhaps you can improvise with the caramel.
Applesauce Cheesecake
Crust:
1-1/4 cups graham cracker crumbs (about 20 squares) 1/2 cup chopped pecans, toasted (Spread nuts in single layer on cookie sheet. Bake 5 to 10 minutes at 350 Degrees F., until light golden brown. Stir occasionally. Do not overbake.) 1/4 cup firmly packed brown sugar 1/4 cup butter or margarine, melted
Filling:
3 (8 oz.) packages cream cheese, softened 1 cup sugar 2 tablespoons all-purpose flour 3 eggs 1 cup applesauce 1/2 teaspoon cinnamon 1/8 teaspoon freshly ground nutmeg
Preparation:Heat oven to 350 Degrees F. In medium bowl, combine all crust ingredients, mix well. Press in bottom of an ungreased 10-inch springform pan.
In large bowl, beat cream cheese and sugar at medium speed until smooth and creamy. Add flour, blend well. At low speed, add eggs one (1) at a time, beating just until blended. Add remaining ingredients; beat until well blended. Pour into crust lined pan.
Bake at 350 Degrees for 50 to 60 minutes or until center is set. Cool. Refrigerate several hours or overnight. Just before serving, carefully remove the sides of the pan. Store in refrigerator.Found this recipe on the internet.
