This is the only one I use and it is a winner for gift giving.

This makes 4 loaves! It is delicious!!!

Tio Pepe's Coconut Bread

4 sticks butter, softened
4 c. sugar
8 eggs
8 t. coconut extract
4 c. sour cream
1 lb. bag shredded coconut
8 c. flour
4 t. baking soda
4 t. baking powder

Cream butter and sugar. Beat in eggs and extract, then sour cream. Add coconut. Stir together the dry ingredients and beat into the batter. Divide batter into 4 greased loaf pans and bake at 350 for 45 mts.
